- 3 medium zucchinis, sliced
- 1 lb ground beef or turkey
- 1 cup marinara sauce
- 1 tsp Italian seasoning
- 1 cup mozzarella cheese, shredded
- 1/2 cup Parmesan cheese, grated
- 1 bell pepper, diced
- 1 onion, diced
- 2 cloves garlic, minced
- 2 large eggs
- 1/2 cup panko breadcrumbs (optional)
Instructions
- Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
- In a large skillet over medium heat, brown the ground meat. Add onions and bell peppers; sauté until soft (about 5 minutes).
- Stir in marinara sauce and Italian seasoning; mix well and heat through.
- Layer half of the zucchini slices in the bottom of the baking dish. Pour egg mixture (whisked with half the mozzarella) over zucchini. Top with meat mixture, followed by remaining zucchini slices and mozzarella (plus panko if using).
- Bake for 30-35 minutes until bubbling and golden brown.
