  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup long-grain white rice
  • 2 medium carrots (diced)
  • 2 stalks celery (diced)
  • 1 medium onion (diced)
  • 3 cloves garlic (minced)
  • 6 cups low-sodium chicken broth
  • 1 tsp dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • ½ cup heavy cream (optional)

Instructions

  1. Prep your ingredients by chopping the onion, carrots, celery, and mincing the garlic.
  2. Add all ingredients except for heavy cream to the crockpot: chicken breasts, rice, carrots, celery, onion, garlic, thyme, bay leaf, salt, pepper, and chicken broth.
  3. Cook on low for 6-8 hours or high for 3-4 hours until the chicken is cooked through.
  4. Once cooking time is up, shred the chicken using two forks and return it to the pot.
  5. If desired, stir in heavy cream for added richness.
  6. Taste and adjust seasoning before serving hot.
