Description

Homemade Chicken Taquitos are a delightful combination of crispy tortillas filled with savory, seasoned chicken and melted cheese.   • 34 boneless, skinless chicken breasts (about 1 lb)
  • 2 cloves fresh garlic, minced
  • 1 cup shredded Mexican cheese blend
  • 6 large flour tortillas
  • 2 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salsa or guacamole for dipping

Instructions

  1. Preheat your oven to 375°F (190°C). In a skillet over medium-high heat, add olive oil and minced garlic until fragrant.
  2. Add chicken breasts seasoned with salt, cumin, and chili powder. Cook until the chicken is done (about 20 minutes).
  3. Remove the chicken, let it rest, and then shred it using two forks.
  4. In the same skillet, mix the shredded chicken with cheese until slightly melted.
  5. Lay tortillas flat; spoon the mixture onto one end and roll tightly, securing with toothpicks if necessary.
  6. Place seam-side down on parchment-lined baking sheet; brush lightly with olive oil.
  7. Bake for 15-20 minutes until golden brown. Serve warm with salsa or guacamole.
