- 3–4 boneless, skinless chicken breasts (about 1 lb)
- 2 cloves fresh garlic, minced
- 1 cup shredded Mexican cheese blend
- 6 large flour tortillas
- 2 tbsp olive oil
- 1 tsp cumin
- 1 tsp chili powder
- Salsa or guacamole for dipping
Instructions
- Preheat your oven to 375°F (190°C). In a skillet over medium-high heat, add olive oil and minced garlic until fragrant.
- Add chicken breasts seasoned with salt, cumin, and chili powder. Cook until the chicken is done (about 20 minutes).
- Remove the chicken, let it rest, and then shred it using two forks.
- In the same skillet, mix the shredded chicken with cheese until slightly melted.
- Lay tortillas flat; spoon the mixture onto one end and roll tightly, securing with toothpicks if necessary.
- Place seam-side down on parchment-lined baking sheet; brush lightly with olive oil.
- Bake for 15-20 minutes until golden brown. Serve warm with salsa or guacamole.
