  • 2 medium Yukon Gold potatoes, diced
  • 2 tbsp taco seasoning
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 cup shredded cheddar cheese
  • 1 cup chopped lettuce
  • 1 medium tomato, diced
  • 1 avocado, sliced
  • ½ cup sour cream or Greek yogurt
  • Tortilla chips for serving

Instructions

  1. In a large skillet over medium heat, brown the ground beef until no longer pink; drain excess fat.
  2. Add diced potatoes and taco seasoning; stir well. Pour in a little water and cook until potatoes are tender.
