  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup salsa verde (fresh or store-bought)
  • 1 cup pepper jack cheese (sliced)
  • 2 tbsp olive oil
  • 2 tbsp fresh cilantro (chopped)
  • Juice of 1 lime
  • Salt & pepper to taste

Instructions

  1. In a bowl, mix olive oil, salsa verde, lime juice, salt, and pepper. Add chicken breasts and marinate for at least 30 minutes.
  2. Preheat the grill to medium-high heat (375°F/190°C) and lightly oil the grates.
  3. Cook each side for about 6-7 minutes until grill marks appear and internal temperature reaches 165°F (75°C).
  4. During the last minute of grilling, top each piece of chicken with sliced pepper jack cheese and close the lid to melt.
  5. Let rest for 5 minutes, then sprinkle with chopped cilantro before serving.
