  • 2 medium sweet potatoes, diced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 3 cups low-sodium vegetable broth
  • 1 yellow onion, diced
  • 3 cloves garlic, minced
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1 cup bell peppers, diced (mixed colors)
  • Juice of 1 lime

Instructions

  1. Prep your ingredients by dicing sweet potatoes, onions, and bell peppers.
  2. In a skillet over medium heat, sauté onions until translucent. Add garlic and sauté for another 30 seconds.
  3. Transfer the sautéed mixture to the crockpot along with sweet potatoes, black beans, tomatoes, bell peppers, vegetable broth, chili powder, cumin, salt, and pepper. Stir well.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. Before serving, adjust seasoning and stir in lime juice for added brightness.
  6. Serve hot with your favorite garnishes like avocado or cilantro.
