- 2 tbsp extra virgin olive oil

- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp garlic powder
- 1/4 cup pine nuts (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Slice the butternut squashes in half lengthwise and scoop out the seeds.
- Drizzle olive oil over the squash halves, season with salt and pepper, and place cut-side down on a baking sheet. Roast for 25-30 minutes until fork-tender.
- While the squash roasts, season chicken breasts with salt, pepper, and garlic powder; sauté in olive oil over medium heat for about 6-7 minutes on each side until cooked through.
- Chop the cooked chicken into bite-sized pieces and mix in a bowl with honey and fresh herbs.
- Remove the roasted squash from the oven, flip cut-side up, and fill each half generously with the chicken mixture. Drizzle with more honey if desired, then return to oven for another 10 minutes.
