  • 2 medium butternut squashes (about 1.5 lbs each)
  • 3 boneless, skinless chicken breasts (about 1.5 lbs total)
  • 1/4 cup pure honey
  • 2 tbsp extra virgin olive oil
  • 2 tsp fresh thyme or rosemary
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1/4 cup pine nuts (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice the butternut squashes in half lengthwise and scoop out the seeds.
  3. Drizzle olive oil over the squash halves, season with salt and pepper, and place cut-side down on a baking sheet. Roast for 25-30 minutes until fork-tender.
  4. While the squash roasts, season chicken breasts with salt, pepper, and garlic powder; sauté in olive oil over medium heat for about 6-7 minutes on each side until cooked through.
  5. Chop the cooked chicken into bite-sized pieces and mix in a bowl with honey and fresh herbs.
  6. Remove the roasted squash from the oven, flip cut-side up, and fill each half generously with the chicken mixture. Drizzle with more honey if desired, then return to oven for another 10 minutes.
