  • 4 boneless, skinless chicken breasts
  • 2 large sweet potatoes (about 1 lb), peeled and cubed
  • 1 cup BBQ sauce (store-bought or homemade)
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Optional: Chopped green onions or fresh cilantro for garnish

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, toss the cubed sweet potatoes with olive oil, salt, and pepper until well-coated.
  3. Spread the sweet potatoes on a parchment-lined baking sheet and roast for 25-30 minutes, flipping halfway through.
  4. While the sweet potatoes roast, heat a skillet over medium heat. Cook the seasoned chicken breasts for 6-7 minutes per side until golden brown.
  5. In the last few minutes of cooking the chicken, pour BBQ sauce over it, allowing it to caramelize.
  6. Ensure chicken reaches an internal temperature of 165°F (74°C). Once cooked, assemble bowls by layering sweet potatoes first, followed by sliced BBQ chicken. Drizzle with extra BBQ sauce if desired.
