  • 4 boneless, skinless chicken breasts
  • 2 cups fresh spinach leaves
  • 1 cup shredded mozzarella cheese
  • 1 large red bell pepper, chopped
  • 2 tsp garlic powder
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Add chopped red bell peppers and spinach; sauté until the spinach wilts and peppers soften (about 4–5 minutes).
  3. Season chicken breasts with garlic powder, salt, and pepper on both sides.
  4. Lay each chicken breast flat, spoon some sautéed veggies on top, and sprinkle with cheese before rolling tightly.
  5. Place seam-side down in a greased baking dish and bake for 25–30 minutes until golden brown and cooked through.
  6. Let rest for 5 minutes before slicing. Serve hot with your favorite dipping sauce or salad.
