  • 1 cup popcorn kernels
  • 1 cup granulated sugar
  • ½ cup unsalted butter
  • ½ cup light corn syrup
  • 1 tsp vanilla extract
  • ½ tsp baking soda
  • ½ tsp salt

Instructions

  1. Pop the popcorn kernels using an air popper or stovetop method until you have about 10 cups of popped corn.
  2. In a medium saucepan over medium heat, combine butter, sugar, corn syrup, and salt. Stir until melted and bubbly (about 5 minutes).
  3. Remove from heat and stir in vanilla extract and baking soda (it will bubble up).
  4. Pour the caramel sauce over the popped popcorn in a large bowl and mix gently until all kernels are coated.
  5. Spread the popcorn on a parchment-lined baking sheet and bake at 250°F (120°C) for about 1 hour, stirring every 15 minutes.
  6. Let cool completely before breaking it into pieces. Store in airtight containers.
