  • 2 lbs beef chuck roast, cut into 1-inch cubes
  • 4 medium carrots, chopped
  • 4 medium Yukon Gold potatoes, diced
  • 1 large yellow onion, chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium beef broth
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 2 bay leaves
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a skillet over medium-high heat. Season the beef with salt and pepper, then brown on all sides (about 5 minutes per side).
  2. In the same skillet, sauté onions and garlic until softened (about 2-3 minutes).
  3. Transfer browned beef and sautéed aromatics to the crockpot. Layer carrots and potatoes on top and stir in tomato paste.
  4. Pour beef broth over the mixture; add thyme and bay leaves.
  5. Cover and cook on low for 7-8 hours or high for 4-5 hours until tender.
  6. Before serving, remove bay leaves and adjust seasoning if necessary.
