  • 1 can (13.5 oz) full-fat coconut milk
  • 2 tbsp yellow curry powder
  • 1 tbsp fresh ginger, grated
  • 4 garlic cloves, crushed
  • 2 bell peppers, chopped (any colors)
  • 1 medium onion, chopped
  • 1 cup low-sodium vegetable broth
  • 2 tbsp lime juice
  • Fresh cilantro, for garnish (optional)

Instructions

  1. Dice chicken into bite-sized pieces and chop onion and bell peppers.
  2. In your crockpot, combine chicken, veggies, garlic, ginger, curry powder, coconut milk, and vegetable broth; stir gently.
