  • 4 skin-on chicken thighs (about 1.5 lbs)
  • 2 cups jasmine rice
  • 4 slices fresh ginger
  • 4 garlic cloves, crushed
  • 1/4 cup fresh cilantro, for garnish
  • 3 tbsp low-sodium soy sauce
  • 1 tbsp sesame oil
  • 2 tbsp chili sauce (optional)
  • Salt and pepper to taste

Instructions

  1. Rinse the chicken thighs under cold water, pat dry, and season with salt and pepper.
  2. In a large pot, bring water to a gentle boil. Add ginger and garlic slices, then carefully lower in the chicken thighs. Simmer for about 30 minutes until cooked through.
  3. Remove the chicken from the pot but reserve the broth. In another pot, toast jasmine rice in sesame oil until fragrant. Add 2 cups of reserved broth and bring to a boil. Reduce heat, cover, and simmer until fluffy.
  4. For the dipping sauce, mix soy sauce and chili sauce in a small bowl.
  5. Slice the chicken and serve over jasmine rice, garnished with fresh cilantro.
