  • 1/4 tsp salt
  • 2 large eggs (room temperature)
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, cream softened butter with brown sugar and maple syrup until smooth.
  4. Beat in eggs one at a time along with vanilla extract.
  5. Fold in pumpkin puree gently until just combined.
  6. Gradually add dry ingredients to the wet mixture until blended without overmixing.
  7. Drop heaping tablespoons of dough onto the prepared baking sheets about 2 inches apart.
  8. Bake for 12-15 minutes until edges are lightly browned. Let cool slightly before transferring to a wire rack.
