Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until fluffy.
  3. Add the canned pumpkin puree and egg, mixing until smooth.
  4. In another bowl, whisk together the flour, baking soda, baking powder, salt, and pumpkin pie spice.
  5. Gradually incorporate the dry ingredients into the wet mixture without overmixing.
  6. Gently fold in the chocolate chips and mini marshmallows.
  7. Use a cookie scoop to place mounds of dough on the prepared baking sheets about 2 inches apart.
  8. Bake for 10–12 minutes until edges are golden but centers remain soft. Allow cooling slightly before transferring to wire racks.
