  • 4 boneless, skinless chicken breasts (about 680g)
  • 2 fresh oranges (juice and zest)
  • 4 garlic cloves, minced
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp honey
  • 3 tbsp extra virgin olive oil
  • 1 tsp fresh thyme leaves (or dried thyme)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, whisk together orange juice and zest, soy sauce, honey, minced garlic, olive oil, thyme, salt, and pepper to create the marinade.
  3. Place chicken breasts in a resealable bag or a dish and pour the marinade over them. Seal tightly and refrigerate for at least 30 minutes.
  4. Arrange marinated chicken in a greased baking dish and drizzle remaining marinade on top.
  5. Roast in the preheated oven for 25-30 minutes until chicken reaches an internal temperature of 165°F (75°C) and is golden brown. Let it rest for five minutes before serving.
