  • 1 lb medium shrimp, peeled and deveined
  • 1 cup long-grain rice, rinsed
  • 1 tbsp Cajun seasoning
  • 1 cup bell peppers, chopped (mixed colors)
  • 1/2 cup onion, diced
  • 3 cloves garlic, minced
  • 2 cups low-sodium chicken broth
  • 2 green onions, sliced for garnish
  • 2 tbsp olive oil

Instructions

  1. In a large skillet over medium heat, add olive oil. Sauté diced onion and chopped bell peppers until softened.
  2. Stir in minced garlic and Cajun seasoning; cook for 1-2 minutes until fragrant.
  3. Add rinsed rice and mix well to coat in oil and spices. Pour in chicken broth, bring to a gentle boil. Reduce heat to low, cover tightly, and simmer for about 18-20 minutes.
  4. Once rice is cooked, gently fold in shrimp. Cover again; cook until shrimp turn pink (5-7 minutes).
  5. Remove from heat; let sit covered for another 5 minutes. Fluff with a fork and garnish with sliced green onions before serving.
