  • 1 lb shrimp (peeled and deveined)
  • 8 oz rice noodles
  • 1 cup bell peppers (sliced, mixed colors)
  • 1 cup broccoli florets
  • 1 cup carrots (thinly sliced)
  • 4 cloves garlic (minced)
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp sesame oil
  • 2 green onions (chopped)

Instructions

  1. Prep all ingredients by chopping vegetables and peeling the shrimp.
  2. Soak rice noodles in warm water for about 10 minutes until soft; drain well.
  3. Heat sesame oil in a large skillet or wok over medium-high heat. Cook shrimp until pink and opaque (3-4 minutes), then set aside.
  4. In the same skillet, stir-fry bell peppers, broccoli, carrots, and garlic until tender-crisp (4-5 minutes).
  5. Add drained noodles and soy sauce to the skillet; stir well to combine and heat through (2-3 minutes).
  6. Return shrimp to the pan with chopped green onions; mix gently and serve hot.
