  • 1 cup chopped pecans

  • 1 tsp vanilla extract
  • 2 large eggs

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Peel and chop sweet potatoes into even chunks. Boil in cold water until fork-tender, about 15-20 minutes.
  3. Drain and mash sweet potatoes in a large bowl. Mix in melted butter, brown sugar, milk, eggs, cinnamon, and vanilla until smooth.
  4. Grease a 9×13-inch baking dish and spread the mashed sweet potato mixture evenly.
  5. In a separate bowl, combine chopped pecans with melted butter and brown sugar; sprinkle over the sweet potato layer.
