  • 1 lb boneless, skinless chicken thighs
  • 1 cup full-fat coconut milk
  • 1/3 cup natural peanut butter
  • 2 tbsp low-sodium soy sauce
  • 2 tbsp brown sugar
  • 2 tbsp freshly squeezed lime juice
  • 3 cloves garlic, minced
  • 1 tsp ground ginger
  • Fresh cilantro leaves (optional for garnish)

Instructions

  1. In a large bowl, whisk together coconut milk, soy sauce, brown sugar, lime juice, minced garlic, and ground ginger until well combined.
  2. Cut chicken thighs into bite-sized pieces and add them to the marinade. Cover and refrigerate for at least 30 minutes.
  3. If using wooden skewers, soak them in water for about 20 minutes.
  4. Preheat your grill to medium heat.
  5. Thread marinated chicken onto skewers, leaving space between pieces for even cooking.
