Ingredients

  • 3 medium zucchinis (about 600g), sliced into 1/4-inch rounds
  • 2 cups marinara sauce (480ml)
  • 2 cups shredded whole milk mozzarella cheese (240g)
  • 1 cup sliced pepperoni (100g)
  • 2 tsp Italian seasoning
  • 2 large eggs
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C) and grease a baking dish with nonstick spray.
  2. In a large bowl, toss sliced zucchini with salt, pepper, and Italian seasoning. Let sit for 10 minutes.
  3. Layer half of the zucchini in the greased dish. Top with half of the marinara sauce, half of the mozzarella cheese, and half of the pepperoni.
  4. Repeat the layering process with remaining ingredients.
  5. Bake uncovered for 30-35 minutes until golden brown and bubbly.
