  • 2 tbsp fresh lemon juice
  • 1 tsp black pepper (coarsely ground)
  • 1 tsp garlic powder
  • 1 tsp salt (adjust to taste)
  • 2 tbsp butter
  • 2 tbsp fresh parsley (chopped)

Instructions

  1. Preheat oven to 425°F (220°C). Pat chicken thighs dry with paper towels.
  2. In a bowl, combine olive oil, lemon juice, salt, garlic powder, and black pepper; toss chicken thighs in the mixture until well coated.
  3. Heat an oven-safe skillet over medium-high heat and sear chicken thighs skin-side down for about 5 minutes until golden brown.
  4. Flip the chicken, add butter around it in the pan, and sprinkle with fresh parsley.
  5. Transfer skillet to the oven and bake for 25-30 minutes until internal temperature reaches 165°F (74°C).
  6. Remove from oven, let rest for 5 minutes, then serve.
