  • 4 cups sweet potatoes (peeled and cubed)
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter (divided)
  • 1 cup pecans (chopped)
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 2 large eggs
  • 1/2 cup milk or heavy cream

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. Boil sweet potatoes in salted water until fork-tender, about 15-20 minutes. Drain.
  3. Mash sweet potatoes with 1/4 cup butter, brown sugar, vanilla, cinnamon, eggs, and milk until smooth.
  4. Spread the mashed mixture evenly in the baking dish.
  5. In a separate bowl, mix remaining butter with chopped pecans and more brown sugar. Sprinkle over the sweet potato mixture.
